Preserving Maturity
We firmly believe that the quality of a great wine is inextricably linked to the health of the ecosystem that produces it.
The estate covers 26 magnificent hectares, a mosaic of land dedicated to excellence.
Our vineyards are situated on hills at an altitude of between 170 and 300 metres above sea level, benefiting from optimal sun exposure that gives the grapes a unique organoleptic complexity.
We believe in the value of longevity: that is why we follow the philosophy of the great French vignerons. Instead of grubbing up entire plots, we painstakingly replace individual, less productive vines. This meticulous work allows us to maintain the balance of mature vineyards, capable of producing fruit of unrivalled depth.
Beyond Organic: A Living Ecosystem
Carus Vini has been a certified organic winery since 2018.
This means completely avoiding synthetic pesticides and fertilisers, favouring natural treatments that boost the vine’s natural defences.
We constantly monitor every row of vines so that we intervene only where necessary, preserving the soil’s microbial diversity and ensuring pure grapes that faithfully reflect the terroir of San Casciano.
Energy and Resources
Clean Production and Energy Saving.
Our winery is designed to be a model of efficiency. Thanks to the integrated solar panel system, we generate the energy required for the winemaking processes, drastically reducing CO2 emissions.
We use ventilated walls and roofs to passively mitigate temperature fluctuations.
The heating systems in the company’s buildings are powered by energy-efficient heat pumps.
