Carus Vini is located in San Casciano in Val di Pesa, one of the prettiest areas of Chianti Classico, and one of those best suited for making wine. Guido Carissimo’s estate extends over about 26 hectares of which 13,5 are planted to vine an another 4,5 to olive trees, all of which has been organically certified farmed from 2017 harvst.

The vineyards are on calcareous clay hillsides, at elevation of 300m above sea level. The primary varietal are the 8,5 Sangiovese hectares, the rest is Merlot, Cabernet Sauvignon and Shiraz.

Guido aims at perfect balance between vegetative growth and productivity, and, to this purpose, the vineyards are carefully tended until the harvest, which is done by hand into small baskets, and is carried out in different phases to guarantee that the grapes are picked only when they are perfectly ripe.

In the cellars, Guido Carissimo consulting the winemaker Gioia Cresti and Giovanni Celani, the cellar man, do their utmost to maintain the quality of the grapes, combining traditional techniques with some modern technologies while maintaining maximum respect for the environment.

Indeed, photovoltaic panels and solar thermic panels produce most of the energy for the cellar equipment that it has been strongly reduced by ventilated roofs and walls.
