THE FARM
CarusVini is located in the heart of Tuscany, exactly in San Casciano in Val di Pesa, one of the best areas to produce Chianti Classico. We have 26ha of which 13.5ha dedicated to wine production. Our vines were planted between 1978 and 1995. We cultivate
several kinds of grapes:
- 8.5ha of Sangiovese (Chianti Classico)
- 5 ha of Syrah, Merlot and Cabernet
- Sauvignon
VINEYARDS
To date, 5ha of vineyards have been progressively replaced with new plants that entered in production from 2019. The vineyards grow on calcareous clay hillsides, at elevations between 200 and 300m above sea level. The primary varietal are the 8,5 Sangiovese hectares that have been qualified to produce Chianti Classico, the rest is Merlot, Cabernet Sauvignon and Shiraz. These vine types are cultivated either with cordon or “Guyot” and have a density of 3.500 – 5.000 plants per hectare according to vine type and the area. The different
exposure of our vineyards allows to produce grapes with a high organic complexity, a necessary precondition to obtain excellent wines
TERROIR
Our area is purely hilly with clay soil rich of skeleton. This soil allows us to produce excellent wines characterized by a good minerality and acidity. The climate is continental with harsh winters below 0°C and summer temperature that can exceed 40°C. The average annual temperature is about 14.5°C. On average, annual rainfall is 900mm mainly between October- April.
CELLAR
Our cellar has 19 steel vats with controlled temperature, both in the traditional cylinder form and in the conical form. They are all in small dimension to optimize the wine management keeping wine type and source separated. In the cellar we vinified all the grapes produced and part of the bulk wine is sold to other producers. Our wines aged both in our steel vats and in our over 60 French oak barrels. Bottles are then stored horizontally in the warehouse in specially designed supports to optimize the cork conservation. For pumping the wine, we use pumps that minimize the physical shocks. The bottles are shipped in high quality and horizontal containers to reduce any transport damage.
CARUS VINI AND SUSTAINABILITY
Carus Vini is a young family estate located in San Casciano Val di Pesa, in the heart of Chianti Classico area. Our winery consists of 26ha, of which 13.5ha are dedicated to wine production and 5.5ha to olives groves. In our vineyards we produce high quality organic wines – Chianti Classico and Supertuscan – only with our own grapes. We produce fine wines with the minimum environmental impact, making use of modern technologies and experimenting techniques of precision agriculture. In our cellar we installed photovoltaic panels to produce energy while in the vineyards we are experimenting natural enzymes to strengthen the immune system of the vines.
