Precision and Respect for the Raw Materials

We have a range of over ten temperature-controlled stainless steel vats, in both cylindrical and truncated conical shapes. The decision to use smaller vats is no accident: it allows us to carry out separate micro-vinifications, optimising the batches and preserving the distinct character of each vineyard according to its specific origin.

When transferring musts and wines, we use only state-of-the-art pumps designed to minimise physical stress, ensuring a gentle transfer that preserves the integrity and structure of the product.

Ageing and Oak

The Art of Waiting in Fine Wood

Whilst some of our production is selected for the freshness of the steel, our finest batches undergo a maturation process in wood. We use 225-litre barriques and 500-litre tonneaux made from fine French oak, selecting mainly medium-toasted oak from the Allier region.

This crucial step endows our wines with complexity, elegance and those velvety tannins that characterise the Carus Vini style.
