Made from 100% Sangiovese, this Chianti Classico is aged almost entirely in stainless steel.
In the glass, it is a vibrant ruby red, with a fruity bouquet of red berries and cherry that blends perfectly with notes of vanilla and iris. It is harmonious and well-structured, savoury and moderately tannic.

Growing area
The 8.5 hectares of Chianti Classico DOCG vineyards are situated between San Casciano and Mercatale in Val di Pesa, in one of the finest growing areas for Chianti Classico. The area is predominantly hilly, characterised by moderately clayey soils rich in stone. The varied exposures allow the grapes used to produce this splendid wine to develop a distinctive organoleptic complexity.

UWW BALDERO – wine aged at sea
Carus is embracing innovation in partnership with Jamin UnderWaterWines, the first Italian company to pioneer underwater wine ageing, to present UWW BALDERO CHIANTI CLASSICO DOCG 2019, the first Chianti Classico aged underwater in the sea.
In an initial phase, which began in late 2023, the project involved submerging 40 bottles of Baldero Chianti Classico DOCG 2019 off the coast of Portofino, confirming the effectiveness of this unique and highly sustainable process of ageing at sea, which is capable of shaping the wine’s maturation. The process imparts to the wine a complexity and elegance, with tertiary aromas typical of long ageing, which come together in a harmonious tasting experience.
